To prepare starchy potatoes for mashed potatoes, start by peeling the potatoes and cutting them into evenly sized chunks. Then, place the potato chunks in a pot of cold, salted water and bring it to a boil. Once the potatoes are tender, drain them and return them to the pot. Mash the potatoes with a potato masher or ricer, and then mix in butter, milk, salt, and pepper to taste. Be careful not to overmix the potatoes, as this can make them gummy. **

Starchy carbohydrates are complex carbohydrates that are made up of long chains of glucose molecules. They are found in foods like potatoes, rice, and bread. Starchy carbohydrates take longer to break down in the body, providing a slower and more sustained release of energy. On the other hand, sugar, also known as simple carbohydrates, are made up of one or two sugar molecules. They are found in foods like fruits, honey, and table sugar. Sugar is quickly broken down in the body, leading to a rapid spike in blood sugar levels and a quick burst of energy. In summary, the main differences between starchy carbohydrates and sugar are their molecular structure, the speed at which they are broken down in the body, and the rate at which they release energy. **

It can be made in advance and easily served in a large dish, making it convenient for a buffet setting. Additionally, it pairs well with a variety of main dishes and can be customized with different toppings or mix-ins to suit different tastes. **

Starchy foods, such as bread, rice, and potatoes, are broken down into glucose during digestion. When we consume starchy foods, the glucose is released into the bloodstream, causing a rise in blood sugar levels. This is because the body needs to produce insulin to help the cells absorb the glucose for energy. If there is an excess of glucose, the body may struggle to produce enough insulin, leading to elevated blood sugar levels. **
